I almost never have a sweet tooth, but somehow after a long day I was craving chocolate in any form. I sort of hate sweets, unless they aren’t super sweet. I know, I know, I’m crazy. My solution to the rare un- healthy sweet tooth is this HEALTHY & VEGAN version of a peanut butter cup, but with almond butter. I prefer almond butter in this because it is nuttier in flavor and has a somewhat sweeter flavor. I made these bites in a few minutes and they can even pass as a quick breakfast or post workout snack.
ingredients
- 1 1/4 cups dry oats
- 1/4 cup almond flour
- 1/4 cup ground flaxseed
- 1/4 cup ground coffee
- 1 tsp ginger
- 1 tbsp maca powder
- 1 tbsp cacao powder
- 1 cup almond butter
- 1/2 cup maple syrup
- 2 tsp vanilla
- FOR TOPPING: Hemp seeds, cacao powder, cinnamon, coconut
DIrections
- Mix all the dry ingredients in a large bowl and mix.
- Add the maple. vanilla, and almond butter. Stir to combine well.
- Cover and let chill in the fridge for 15 minutes. This helps to combine everything and evenly disperse the flavors.
- Remove from fridge and roll into balls.
- Top with toppings of choice. I used hemp seeds and cacao powder.
*The bites should last a few days in a Tupperware on the counter or in the fridge for a week or so.
*This does work with any nut butter.
*you may need to ad more maple syrup if your bites wont come together.
