Kale + Apple Salad

If you don’t like kale you probably haven’t had it prepared correctly, because it can be SO delicious and flavorful. Kale is a dry green, which means you have to supplement that with an awesome dressing, which I think I’ve done with the awesome spicy harissa dressing.

For the Dressing

  • 1/2 cup  extra-virgin olive oil
  • 2 tablespoons fresh lemon juice
  • 2 teaspoons harissa paste
  • 2 tablespoons white wine vinegar

For the Salad

  • 1 bunch kale (about 10 oz)
  • 2 apples, diced
  • 1/2 cup walnuts

Directions

  • Preheat the oven to 300 degrees.
  • Roast chopped walnuts until fragrant but not too browned, about 5 minutes.
  • Mix oil, lemon juice, harissa, and vinegar in a small bowl. Whisk to incorporate all of the harissa.
  • Rinse and chop kale. Place into the serving bowl.
  • Massage kale for 5 minutes with a quarter of the dressing. This is key in order to not have tough kale.
  • Top with diced apples and walnuts.
  • Serve with extra dressing. 

This salad is great as a side or  with chickpeas on it and some plant based feta for a complete lunch.
